What everyone should know

If you eat fruit and vegetables regularly and a portion of fish from time to time, you will supply your body with almost all the vitamins it needs in sufficient quantities - except for vitamin D. It is possible to absorb the necessary amount of vitamin K through food, but it depends on the details of the diet: Those who eat a lot of broccoli, kale or parsley provide themselves with sufficient vitamin K. Those who avoid such varieties of vegetables may be deficient in vitamin K.

Vitamin D is biologically active in the human body in the variant D3 and vitamin K as K2 in MK-7 form.

Our skin produces vitamin D when exposed to direct sunlight. However, an excess of direct sunlight increases the risk of skin cancer. In Europe, many people suffer from vitamin D deficiency. The consequences include a weakened immune system, an increased risk of cancer, fatigue and depression. The German Robert Koch Institute explains the reasons for the vitamin D deficiency of many Europeans thus:

"Low vitamin D levels in the local latitudes are mostly caused by low endogenous vitamin D formation (self-synthesis). For self-synthesis, UV-B radiation of the wavelength 290 nm to 315 nm is needed, which is only present year-round in regions below the 35th degree of latitude. At higher latitudes, the intensity and duration of sufficient radiation decreases and vitamin D formation becomes dependent on the season. This also applies to Germany, which is located between the 47th and 55th degrees of latitude. Here, the body's own formation is only possible from about March to October when people spend time outdoors. During this time, in addition to meeting acute needs, the body can also build up vitamin D reserves in fat and muscle tissue, which it can draw on during the winter months.

However, the build-up of sufficient stores can be made more difficult by various external and individual factors, so that low vitamin D levels can occur, especially in the dark season.

Among the external factors are climatic conditions. For example, UV-B radiation can be reduced by more than 90 % even in the summer months due to unfavourable weather conditions, such as heavy cloud cover. In addition, altitude, sunshine duration, ozone content of the air and air pollution also play a role.

Individual factors include age, skin colour and body weight, as well as the influence of modern lifestyles. In particular, the steady decrease in outdoor activities and the increased stay indoors (e.g. due to office work or changed leisure time behaviour) should be mentioned here. The respective sun protection behaviour and certain clothing habits, for example the complete covering of the body for cultural or religious reasons, also have an influence.

In addition, it is difficult to provide the human body with sufficient vitamin D with the help of food because only a few foods contain appreciable amounts of vitamin D (for example, fatty sea fish, certain offal, edible mushrooms, eggs), which are rarely consumed in Germany or are consumed in small quantities."
